I'm not much of a cook...I mean I cook for my family and I've gotten a little better at it over the years but it's not something that I'm naturally good at. But every once in a while I find a recipe that makes it seem like I really know what I'm doing!
My mom used to make chicken and dumplings when I was growing up and I've been craving it and so this weekend I gave it a shot. And damn it was pretty tasty!
It was perfect for the rainy fall weekend we had here in Seattle. It was touch time consuming but very easy. Actually when I just looked at the recipe I think that it said the total prep time was 10 minutes. I don't about that...at least not for me. But I'm not the best multi tasker in the kitchen so that's probably why it took me a little longer. But no matter the time it was so very worth it!
Here is the recipe that I used....Chicken and Dumplings Casserole. And here a few changes that I made:
-I used 2 cups of carrots instead of 1
-I added about a cup of mushrooms
-I probably used about 3 cups of cooked chicken (and we grilled ours first)
-Before adding the broth to the skillet with the veggies and chicken I made the "sauce in a separate pot: I used about 5 or 6 tablespoons of flour (it said 3) and I slowly heated and stirred that with about 3 cups of broth until it thickened. Then I added that to the skillet and then added more broth...probably about another cup.
Basically I used more chicken and veggies which meant that I needed more broth. But overall, easy peasy!
And pair it with Elysian's Night Owl Pumpkin Ale and you have a perfect fall meal! Yum!
